If you love salted caramel, then is a must try! Soft, chewy caramel that melts in the mouth. Just be careful, you can’t stop at one.
Let’s Start
Yields – 40 mouth watering Salted Caramels
Ingredients
- 113 g – cannabutter
- 120 ml – heavy whipping cream
- 60 ml – light corn syrup
- 180 g – cannabutter, melted
- 200 g – granulated sugar
- 1/2 tsp – course or flaked sea salt
Special Equipment
- Candy thermometer or a digital cooking thermometer
Instructions
Step 1
Using parchment paper, line a 9×5 inch loaf pan. Make sure you line the pan at least 1 inch up on the sides.
Step 2a
In a small sauce pan, combine the sugar and the corn syrup. Caramelize the sugar with medium heat until it reaches 160 deg C or 320 deg F. This will take about 5-10 min
Step 2b
While waiting for the sugar to caramelize, take the whipping cream and combine it with the cannabutter. Melt the mixture using a microwave until the butter is in liquid form
Step 3
Once the temperature of your caramelize sugar reaches 160 deg C, slowly add your cannabutter/whipping cream mixture. This process will cool the caramel mixture down. NOTE: do this extremely slowly. When adding the mixture, the process will create lots of bubbles that can over flow if done too quickly.
Step 5
Continue to heat the sauce pan until the caramel reaches 116 deg C or 240 deg F.
Step 6
Pour the caramel into the loaf pan, and let it cool for about 20 min. Then sprinkle the salt
Step 7
Let the caramel rest until the caramel solidify. Then cut the caramel into pieces and enjoy
TIPS
- If you don’t like the cannabis taste, try to do wash.
- Use the parchment paper from the baking, cut it into little squares to help wrap the caramels
